Creamy Zucchini Quiche

Hello again!!!! Let's put up another plate on the table. Here is something a little lighter. Hmmm,
I know how can this be, just wait until you cut a slice for breakfast with your favorite cup of coffee or have it with your favorite dinner salad. For breakfast, lunch or dinner you will be looking for more. This makes 1 Quiche.


Creamy Zucchini Quiche


Ingredients

2 Tablespoons Dijon Mustard
3 cups grated Zucchini
8 Large Mushrooms sliced
2 Tablespoons Butter
2 cups Jack Cheese shredded
1 cup Cream cheese room temp.(cut into small cubes)
1/2 cup Milk
3 Egg Yolks
1 Whole Egg
1/8 Teaspoon White pepper
1 9 inch. Pie Shell cooked Half done.

Preheat oven to 350*

Take your grated zucchini put in a drainer sprinkle with salt let weep to remove some of water out about 15 Min's. Take your mushrooms and butter in sauce pan and saute until mushrooms have a little brown on them. If they are still wet drain them.Then take your mustard brush inside the bottom of pie crust,then place mushrooms in the bottom on the mustard, spread them out so that they are not on each other. In a mixing bowl put in milk, egg yolks, whole egg, cream cheese and pepper; whisk until cream cheese and eggs blend together. Take your pie crust put 1 cup of jack cheese spread on bottom cover, get your zucchini and 1/2 cup of cheese and mix together then put in to pie crust, don't push filling down. It must be even with pie crust edge. Next you take your batter and pour over your pie, don't let it go over the side,wait a few min's. so it can drain into the zucchini, it should be level with the crust again not over flowing, almost done. Sprinkle remainder of cheese over the top. Put in oven at 350* for about 35 Min's., top should be golden brown not to dark. Check center with toothpick it should not be wet but still moist; let set for 5 -6 Min's before cutting to serve.
(To reheat, I microwave. It's real easy for breakfast).

Pizza Dough

How about some great pizza tonight or maybe for lunch! What's your favorite topping? My all time favorite is cashews and peperoni. Mmmm, sounds good! Don't worry; I have a pizza sauce recipe too, as well as one you have never tried. Yes I know it's not low carb ! Just remember to eat in moderation and share with every one.

Pizza Dough

Ingredients

1 Package Yeast
1 Cup of warm Water (110*)
1 Teaspoon sugar (can sub, Splenda)
1/2 Teaspoon salt
2 1/2 Tablespoons olive oil
2 1/2 cups Flour

Preheat oven to 375*

In a large bowl mix in water, sugar, and yeast. Let yeast bloom, takes about 10 mins. Then add other ingredients into the mixing bowl; salt, flour, and oil. Knead your dough for about 7 to 8 mins., form into a dough ball, place dough into bowl again. Cover with plastic wrap, let rise until double in size. Then take out of the bowl, place on to a floured surface shape or roll out to size that you like (this recipe is good for 1 large pie or 2 medium pies, work's good for deep dish too). Add you favorite sauce, cheese, and topping. Pop in oven, cooks in about 20 mins., check bottom crust for doneness; golden brown for chewy crust / dark brown for crispy. Take out of oven and let cool for 5 mins. before cutting. If you can wait.....

Pizza Sauce

Ingredients

2 cups tomato sauce
1 Teaspoon Oregano
1/2 Teaspoon Basil
1/4 Teaspoon sugar
1/4 Teaspoon red wine vinegar (or balsamic )
1 pinch of salt

Put all ingredients into sauce pan, bring to high simmer then turn off, letting this cool before using this will bring all the flavors together. Enjoy ..

I'll bet thought I forgot the other pizza. (Sloppy Joe) Say what!! Don't worry it's great for family night, just make your dough then, when your waiting for it to rise cook Sloppy Joe filling like for the sandwich. Roll out dough put sloppy Joe on top like the sauce, then put cheese on top and cook like a regular pie. Let cool 5 mins. before cutting or it will fall apart . You enjoy and have fun.....

Basic Bread Recipe

Hello everyone! Time to get this on the plate. I hope you enjoy today, I know that every one likes hot bread just out of the oven. It never lasts at my house, especially with some butter ohhh! That makes me think it's time to make some right now. Everyone can make this basic loaf of bread!! I will teach you a great many other things to make with this recipe ...... like rolls for dinner or lunch or even Cinnamon rolls/bread bowls . My Mom gave me this recipe, I am sure she won't mind us borrowing it. I still remember the first time I stood on a chair just to reach the dough to knead it and how much flour I got all over the table and the floor.

Bread

Ingredients

1/4 cup oil
3/4 cup honey
1 packet yeast
2 Teaspoons salt
1 3/4 cups warm water temp 110*
4 cups flour
Preheat oven to 350*
Makes 2 loaf's

Put your water and yeast into Large mixing Bowl add honey, let yeast bloom (This means to let yeast develops in water , you will see it grow, takes about 10 mins). Then mix in flour, salt, and oil until all ingredients are all together. Let rest for 10 mins., then knead dough for 10 more mins. (If your not using mixer with a kneading paddle make sure that your table and hands have enough flour so the dough won't stick to anything). Now we need to let the dough rise to double in size, then form the dough into bread pans . (oil and flour them, don't want them to stick) Then we punch the dough down let rise again, (This will take about 45 mins. each time, it will rise faster if it's in a warm place). Put in a preheated oven bake for 35-40 mins. Crust should be golden brown (take out of pan, it should sound hallow on bottom when thumped with your finger, let cool to room temp. before slicing it)
